I made this tonight for dinner in the casserole version. My husband said it tasted just like stuffed peppers that he use to eat when he was little. It was a little runny so next time I'll use 3 cups to reconstitute it instead of 4. The majority of my kids liked it too so that's a bonus. Thanks for sharing this one Francesca :)
I loved this recipe! My hubby who usually doesn't like peppers even ate 2 bowls of it. Love that I can make it a "Meal in a Jar" for those busy times that I need to just grab a jar and cook something quick.
1st "Meal in a Jar" I've made... and thank goodness it went flawless or I would've never tried again! I knocked it down to 2 servings and put it in a pint jar, added water and cooked it about 3 minutes in the microwave. Fantastic!

LOVE this recipe! I typically do it as a casserole rather than a soup, but it is a family favorite that is in regular rotation. It's made even better because I typically have all the ingredients on hand in my Thrive pantry!
